Potjie Time...

These are your basic steps to making any potjie, just enough to get you going!
1. Make 2 fires, one fire under the pot, the other fire away from the pot, use this second fire to make coals to place under the pot every now and then . The idea is to have just enough heat to keep the pot simmering for about 6-8 hours.
2. Add soome oil to the pot and heat it up. Once the pot is nice and hot add the meat/chicken. Brown the meat then remove from the pot.
3. Add some more oil to the already warm pot and seal the potatoes. Remove the potatoes and fry the onions. Now remove some coals and let the pot cool down a little before you start building your "layers".
4. Leave the onions at the bottom of the pot (onions don't burn easily incase your pot gets to hot) and place the meat on top of the onions right at the bottom of the pot.
5. Chop and add your garlic and add other spices on top of the meat. Leave the herbs untill about half an hour before you serve otherwise you'll lose the flavour of the herb. We used some dried apricots, garlic and ginger here.
6. Add the other ingredients to the pot layer by layer starting with the hardest vegatables towards the bottom i.e. potatoes, carrots, broccoli, butternut. Add your layers about 15-20 minutes apart , leave the lid on and never stir the pot!

 

Get as creative with your pot as you like. Experiment with all sorts of veggies and herb combinations. Add some wine or any cooking sauce you like.
